Production Notes
32% Cabernet Sauvignon, 27% Cabernet Franc, 15% Malbec, 13% Petit Verdot, 13% Merlot.
Winemaker Notes
All components for the Night were fermented as a single variety and barrelled for 12 months. After that period we did our blending trials and decided on the 2021 Night. We then put the new Night blend back into barrel and let it rest for another 7 months before we bottled it. Total of 19 month in French Oak, 25% new.
