Tous was produced in the delicate process of the Saignée Method. While harvesting the fruit that was destined for this sparkling, the grapes were handled as gently as possible in order to minimize the extraction of coarse phenolic compounds from the skin. Only the free run "bleeding" of our Pinot Noir was used in making this exultant wine. We raise our glass to the all and everything.
Rosé, produced in the traditional Saignée method, is carbonated to create a Prosecco-style bubbly. The resulting wine is crisp and refreshing, with ripe aromas of strawberries, cherries, white peach, and a hint of honey.
