- VINTAGE DESCRIPTION:
The 2008 growing season at Ex Nihilo began with a much cooler spring which led to a later than usual bud break. Summer temperatures were also a little lower than average resulting in a later ripening that was fully achieved thanks to hotter weather in August that continued into September.
- WINEMAKING:
On October 19th the grapes were hand harvested, a small portion of the Pinot Gris grapes underwent a gentle press with the remainder undergoing a whole-cluster press for maximum fruit extraction. The juice was then cool fermented in stainless steel for two weeks.
- TASTING NOTES:
An elegant, full-bodied Pinot Gris with aromas of pink grapefruit, tropical mango and papaya. The palate further reveals the complexity with flavours of peach, pear and delicate spice.
